Since 2007 FONDUE have retained a disruptive boutique bespoke nature to every assignment which has led to numerous successful openings across the globe under the expert guidance of internally renowned designer Mark Burns
Working within the hospitality design and management consultancy industries for all operational areas and specializing in the foodservice, linen management, staff wellbeing and solid waste management. FONDUE continue to disrupt the industry by breaking through barriers and merging classic traditions with futuristic methods.
Since 1989 Mark has supported stakeholders across 5 continents and over 40 countries in developing luxury hospitality experiences.
Initially educated and based in the United Kingdom Mark developed an understanding of international cultures and requirements at an early age and nurtured an expansion of experiences when relocating to the United Arab Emirates.
With long standing experience in both operations and design paired with a particular interest within the kitchens and technical F&B areas, Mark has supported owners, operators and development teams in numerous iconic luxury hospitality projects.
As one of the world’s foremost specialist consultants, Mark has driven the importance of design within operational areas to the highest level, ensuring that the founding pillars of the FONDUE experience are implemented as a priority.
Marks' tireless push for exceptional results in all projects continues to question traditional methods and boundaries in all aspects of hospitality operational design and implementation.
In recent years mark has worked closely with internationally recognized luxury hotel operations teams and in particular the technical services representatives. Combining further such experiences, with the unique FONDUE recipes, has allowed Mark to further expand the portfolio.
